Lasagne

Lasagne 


This is one of my favourite dishes. Many recipes do not use  bechamel sauce but I find that this makes the dish ever so tasty!



Ingredients for the sauce:
2 onions: 1 brown, 1 white
1 glove of garlic
1 leek
2 celery sticks
300 gr. lean pork
100 gr. of chicken
300 gr ground beef
some parsley
extra virgin olive oil
pinch of oregano
1 nutmeg
2 cans tomato pulp
1 can tomato sauce
a sage leaf
rosemary
a bay leaf


Ingredients for the Béchamel Sauce:
1.5 litre of milk
1 nutmeg
salt and pepper
50 gr. butter
200 gm. cornflour


PREPARATION of the sauce:

1. Finely chop the onion, garlic, leek, celery and parsley. Lightly fry them in the oil with the sage, bay leaf and rosemary. Once the vegetables are browned remove the herbs.
2. Finely mince the meat. Add the meat to the vegetables and cook the combined ingredients for a further 20 minutes.
3. Add the tomatos, remaining herbs and a bay leaf and continue cooking the sauce over a medium heat for approximately 2 hours.

PREPARATION of the béchamel sauce:
4. Heat aprox 2 cups of milk and the butter until almost boiling - but don't let it boil!
5. Take off from heat and add the cornflour stirring constantly to avoid lumps.
6. Put back on heat and slowly add the rest of the milk stirring constantly over a medium heat until it begins to thicken. Allow the sauce to thicken for a further 5 mins reducing the heat to low.

FINAL PREPARATION:
7. Cook the lasagne in a saucepan of salted boiling water.( I find that the no cook lasagne is just as good.Barilla makes some excellent no boil lasagne)
8. Cover the base of a greased baking dish with a thin layer of meat sauce, then add a slither of bechamel sauce, and a layer of lasagne. (You can also add some parmesan cheese.) Repeat this process until all the ingredients have been used, finishing off with the bechamel on the top. Cover with aluminum foil
9. Cook the lasagne in a preheated oven for 1/2 hour at 180°.
10. For the last 10 minutes, take off the foil and add grated parmisan cheese and put back in the oven

Some tips.
You can also layer with ricotta and/or creamed spinach for a really decadent dish!

Easter biscuits

Yum...these were delicious! Again, thanks to The Telegraph, UK I found another delicious recipe and just in time for easter.

Ingredients

70g plain flour
250gms unsalted butter, diced
125gms golden caster sugar
1 egg yolk
1 tsp vanilla extract
biscuit cutters 
Method
Sift the flour and half a teaspoon of salt into a bowl and set aside. Cream together the butter and sugar in a large bowl, using a wooden spoon or a mixer, until well combined and fluffy. Add the egg yolk and vanilla and mix well, then work in the flour. Once the mixture comes together as a dough, dust your hands with flour and wrap it in cling film. Chill for an hour (or up to a few days if more convenient) or freeze for up to a month. This dough can otherwise be tricky to work, especially in hot weather or a warm kitchen.
Preheat the oven to 180C/gas mark 4. Roll out the dough using plenty of flour (it is quite sticky) to 3-4mm thick. Cut out the biscuits with your chosen cutters and lay them on two baking sheets lined with parchment. Make holes towards the top of each with a skewer for threading through the ribbon. Bake for 12-15 minutes, or until pale gold. Cool on a wire rack, re-forming the ribbon holes with the skewer.

To decorate
700g white sugarpaste
colour paste in the colours you would like to use.
250g packet royal icing
silver balls
6m coloured ribbon for hanging

Divide the sugarpaste into three and place in separate polythene bags. Use the colours on two pieces and leave one white
On a clean work surface dusted with icing sugar, roll out the  sugarpaste to about 2mm thick. Cut out with the cutters matching the shapes
Make the royal icing according to the packet instructions, divide into colours  and put into piping bags.
Pipe a little royal icing on to the biscuit and use to stick on the sugarpaste shape. Make a hole in the sugarpaste in the same place as that on the biscuit for the ribbon. Add silver balls for decoration.
Allow the sugarpaste and icing to set overnight. Cut the ribbon into 25cm lengths and thread through each biscuit.

Gnudi with tomato sauce

Gnudi?? what a weird name! Nudo means 'nude' in italian and these are basically ravioli without the pastry wrappers! They can be considered a cousin of  gnocchi but made with ricotta rather than potato.

I would suggest using fresh ricotta from a cheese store rather than supermarket ricotta. Make sure the ricotta is will drained but putting it in a sieve lined with cheesecloth and leave in the fridge until it stops dripping.
Whats so great about this recipe is that you can add spinach, different herbs, well its up to your imagination. The sauce can also be anything you like and a simple as butter and sage.

This recipe is similar to one i posted a while ago for Malfatti.

Ingredients:
1 cup flour
1 lb ricotta
2 eggs
1 egg yolk
1/2 tsp nutmeg
 2 1/2 cups grated parmesan
sea salt and fresh ground pepper to taste
2/3 cup fresh tomato sauce ( or cheat here and used canned!)

Method
Fill a pan with water, add some salt and bring to the boil.
In a food processor, mix the eggs, ricotta, egg yolk, 2 cups of the cheese, the nutmeg, add salt and pepper to taste.
Mix until you get a smooth paste.
Sprinkle the flour onto a plate.
Divide the mixture into manageable pieces and roll into strips about 1 1/2 inch wide. They should look like snakes!
Cut slices of about 3/4 inch thick and roll them lightly in the flour.
Make sure the water in the pan is boiling and and add to the pan but don't over crowd.
Let boil for about 2 mins then remove with a slotted spoon. Repeat untill they are all cooked,
(At this point, you can let them cool down and refridgerate for later use. Covered, they can keep for about a day).
If you are eating them immediately, pre-heat the oven to 400F, put the gnudi in a baking dish, drizzle with the tomato sauce, add the remaining cheese and bake until lightly browned (about 15 mins)
Should serve 4!
