Keftethes - Greek Meatballs Recipe


Greek Meatballs (Keftethes)

4 servings.
Ingredients
4 slices bread, white or wheat or whole grain - or Bread crumbs - they’re easier.If you use bread, trim the crusts.

1 pound ground beef
1 egg
1 medium onion chopped fine.
1 tbs. crushed mint
salt and pepper to taste
some flour
2 tbs butter. 2 tbs olive oil.


Cooking method
Place in mixing bowl and cover with small amounts of water. For bread crumbs youcan omit this step.

Add meat, egg, onion, mint, salt and pepper.
Shape into two inch patties.
Coat the patties well with the flour.
Fry the patties in the mixture of oil and butter.f. Brown on each side then drain.
You can make these ahead of time and freeze them thenwhen you are ready to serve
efrost and reheat them at 400 degrees for 20 minutes.

These are absolutely fantastic with potato salad or coleslaw. They’re also great cold and on picnics. You can also use these with a tomato sauce and serve meatballs and spaghetti. A little twist on the traditional. Enjoy!

Kourabiedes - Greek cookies that taste of heaven!

I made these last Easter so this is a good time to try them out again. They are really delicious! The finished result does not look like much but they literally melt in your mouth!

Yield: 30 Pieces

Ingredients:
2 cups unsalted butter
1 cup icing/powdered sugar
3 Egg yolks
3 tbls Brandy
2 tsps Vanilla extract
6 cups Flour
1/2 cup Almonds (blanched), chopped
1 lb Icing/powdered sugar

Method
Beat the butter with the sugar until it becomes fluffy.
Add the egg yolks one by one, beating continuously.
Add the brandy and vanilla.
Blend in the almonds and the flour, a cup at a time. Use enough flour to get a firm dough (it may take a bit more or less than the amount mentioned in the ingredients list).
Use your hands to do the mixing, as an electric mixer will be useless after the first two or three cups of flour have been added.
Place the dough in the refrigerator for at least one hour.
Shape the dough into balls, about one inch in diameter, flatten them and place on greased cookie sheets.
Bake at 350 degrees F. for 20 minutes.
Remove from the oven.
Roll each cookie (while it is still hot) in the powdered sugar and put it back on the cookie sheet.
Repeat this step once more, so that you get a thicker coating.
Place the coated cookies on a platter, liberally sprinkling each layer and the bottom of the platter with powdered sugar.
When you are done, there shouldn't be any sugar left.
Let them cool and they are ready to eat!

Feta Cheese Souflee

I got this recipe from an English friend of mine - I first made it about 30 years ago! (i am so OLD!) when i was in college in Bournemouth. It can be rather impressive - if it rises that is!
The mixture can be prepared in advance but since the souffle is best served immediately, start step 5 just before serving time so that it will be served nice and fluffy.


Ingredients
7½fl oz milk
3 thick slices sourdough bread(cut off crusts)
5oz crumbled feta cheese
3 eggs, separated
7oz ripe tomatoes, finely diced (remove seeds)
2oz butter, softened
pinch of sugar
1 tbs fresh basil or mint leaves, chopped
Salt and pepper
pinch of freshly grated nutmeg


Method
1. Preheat the oven to 425F
2. Tear up the bread, pour the milk over and soak for 5-10 minutes.
3. Put the cheese into a food processor with the butter, egg yolks, milk and bread mixture, salt, pepper and nutmeg. Process until smooth.
4. Mix the tomatoes with the sugar, basil or mint and salt and pepper, and divide between six buttered ramekins.
5. Whisk the egg whites until they form stiff peaks and fold into the cheese mixture. Spoon this over the tomatoes, filling each ramekin almost to the top.
6. Put the ramekins straight into the oven. Bake for 10-15 minutes until nicely puffed and browned. Do not open the oven while cooking or the souffles will deflate!
7. Serve immediately.
